Halloumi Lemon Thyme Skewers (Printable Recipe)

Grilled halloumi mixed with thyme, veggies, and zingy lemon packs a punch of flavor and color.

# Ingredients You'll Need:

→ For the skewers

01 - 1 block halloumi cheese (225–280 g), cut into 2.5 cm cubes
02 - 1 lemon, sliced into thin rounds or wedges
03 - 1 medium red onion, cut into chunks
04 - 250 g cherry tomatoes

→ For the marinade

05 - 45 ml extra-virgin olive oil
06 - 30 ml freshly squeezed lemon juice
07 - 1 tablespoon fresh thyme, finely chopped or 1 teaspoon dried thyme
08 - 2 garlic cloves, minced
09 - 1 teaspoon honey
10 - Salt, to taste
11 - Freshly ground black pepper, to taste

→ Optional garnishes

12 - Fresh thyme sprigs
13 - Crushed red pepper flakes

# Steps to Follow:

01 - In a small bowl, combine olive oil, lemon juice, chopped thyme, minced garlic, honey, salt, and black pepper. Add the halloumi cubes and gently toss to coat. Allow to marinate for at least 10 minutes for optimal flavor absorption.
02 - Thread the marinated halloumi cubes, lemon slices, red onion chunks, and cherry tomatoes onto skewers, alternating ingredients for color and balance. Brush any remaining marinade over the assembled skewers.
03 - Heat a grill or grill pan to medium-high. Lightly oil the grates to prevent sticking.
04 - Place the skewers on the hot grill. Cook for 2–3 minutes per side, turning periodically, until the halloumi is golden brown and slightly charred and the vegetables are tender.
05 - Transfer the grilled skewers to a serving platter. Garnish with fresh thyme sprigs and, if desired, a drizzle of olive oil or a sprinkle of crushed red pepper flakes.
