In a small bowl, combine olive oil, lemon juice, chopped thyme, minced garlic, honey, salt, and black pepper. Add the halloumi cubes and gently toss to coat. Allow to marinate for at least 10 minutes for optimal flavor absorption.

Thread the marinated halloumi cubes, lemon slices, red onion chunks, and cherry tomatoes onto skewers, alternating ingredients for color and balance. Brush any remaining marinade over the assembled skewers.

Heat a grill or grill pan to medium-high. Lightly oil the grates to prevent sticking.

Place the skewers on the hot grill. Cook for 2–3 minutes per side, turning periodically, until the halloumi is golden brown and slightly charred and the vegetables are tender.

Transfer the grilled skewers to a serving platter. Garnish with fresh thyme sprigs and, if desired, a drizzle of olive oil or a sprinkle of crushed red pepper flakes.
