Add chicken thighs to a plastic bag or a large baking dish and set aside.

Add soy sauce, mangos, garlic, ginger, and water to a small blender or food processor. Blend until smooth.

Reserve ¼ cup of the sauce, then pour the remaining marinade over the chicken. Seal the bag shut and refrigerate for 2 to 8 hours.

Heat grill to 400°F.

Remove chicken from the marinade using tongs, shaking off excess marinade. Grill chicken for 6-7 minutes per side.

Place grilled chicken on a serving platter and brush with reserved sauce. Sprinkle with chopped cilantro, if desired, and serve.
