Place raw cashews in a bowl and cover with water. Let soak for at least 3 hours or overnight for optimal creaminess.

Drain soaked cashews and add to a high-powered blender along with coconut milk, chopped honeydew, and maple syrup.

Blend mixture on high until completely smooth and creamy. Taste and adjust sweetness if needed.

Add 4–6 drops of green food coloring or mix blue and yellow to achieve a honeydew-like shade. Blend briefly to combine.

Pour mixture evenly into popsicle molds. Tap gently to remove air bubbles.

Transfer molds to freezer and chill for at least 6 hours or until completely solid.
