Healthy Homemade Melona Bars (Printable Recipe)

# Ingredients You'll Need:

01 - 1 cup raw cashews, soaked at least 3 hours
02 - 1 cup full-fat coconut milk
03 - 1 1/2 cups chopped ripe honeydew melon
04 - 2 tablespoons maple syrup

05 - 4–6 drops natural green food coloring

# Steps to Follow:

01 - Place raw cashews in a bowl and cover with water. Let soak for at least 3 hours or overnight for optimal creaminess.
02 - Drain soaked cashews and add to a high-powered blender along with coconut milk, chopped honeydew, and maple syrup.
03 - Blend mixture on high until completely smooth and creamy. Taste and adjust sweetness if needed.
04 - Add 4–6 drops of green food coloring or mix blue and yellow to achieve a honeydew-like shade. Blend briefly to combine.
05 - Pour mixture evenly into popsicle molds. Tap gently to remove air bubbles.
06 - Transfer molds to freezer and chill for at least 6 hours or until completely solid.
07 - Run warm water over molds for a few seconds to release bars. Serve immediately.
