Whisk flour, baking powder, baking soda, salt, and sugar in a bowl. In a separate bowl, mix buttermilk, eggs, and vanilla. Gently fold wet and dry mixtures together until just combined. Let rest 10 minutes.

Lightly flour surface. Roll dough to 1/2 inch thickness. Cut into 4x2 inch rectangles. Chill bars for 10–15 minutes before frying.

Heat oil to 350°F. Fry 2–3 bars at a time for 1–2 minutes per side until golden brown. Drain on paper towels.

Whisk powdered sugar, maple syrup, milk, and extract until smooth. Adjust milk for desired thickness.

While warm, dip each bar face down into glaze. Let excess drip for 5–8 seconds, then place on a rack to set.
