Chilli Garlic Noodles Fast (Printable Recipe)

Tangy noodles mixed with punchy chilli garlic sauce, green herbs, and a touch that feels straight from the wok.

# Ingredients You'll Need:

→ Noodles and Aromatics

01 - 0.5 cup coriander leaves, chopped up fresh
02 - 2 small spring onions, chopped fine
03 - 150g dried wheat noodles or 300g if you’ve got fresh ones

→ Chilli Garlic Sauce

04 - 0.5 tablespoon dark vinegar
05 - 1 tablespoon chilli flakes or powder, tweak how spicy you want it
06 - 0.5 teaspoon sesame oil
07 - 1.5 tablespoons soy sauce
08 - 4 garlic cloves, minced nice and small
09 - 3 tablespoons plain oil (anything like canola, sunflower, or grapeseed works)
10 - 0.5 tablespoon sugar, white works best

→ Optional Garnish

11 - 1 tablespoon of crispy chilli oil from home if you want extra heat

# Steps to Follow:

01 - Give everything in your bowl a really good toss. Eat it right away when it’s still steamy and the noodles are bouncy.
02 - Spoon your hot noodles over the bowls of chilli garlic sauce. Shower with coriander and spring onions. A slick of crunchy chilli oil on top is totally up to you.
03 - Boil noodles following pack directions. Usually takes 3 quick minutes. Pour off the water with a sieve or colander.
04 - Splash in soy sauce, black vinegar, and sesame oil. Stir everything together well and put half the sauce in each big serving bowl.
05 - Warm up the neutral oil in a little pot till you see wispy smoke or it shimmers. Pour hot oil right over your chilli garlic bowl. Mix it up so it’s all sizzling and combined.
06 - Dump chilli flakes or powder, garlic, and sugar into a heatproof mixing bowl. Don’t stir yet—you do that after the oil goes in.

# Extra Tips:

01 - How spicy do you want it? Just add more or less chilli powder or flakes to taste.
02 - Make your chilli garlic sauce earlier if you like, but always cook up the noodles fresh when you’re hungry.
03 - Got leftovers? Pop them in a sealed container and stash them in the fridge—good for about four days.
