Leave the bread in the pan to cool for about 10 minutes. Then move it to a rack to chill out all the way before slicing up.

Stick it in the oven for about an hour. When a toothpick poked in comes out clear, you're good.

Pour in the batter and use a spatula to even out the top.

Toss in the flour, then add salt and baking soda. Gently mix. Don’t work it too hard or your bread gets tough.

Now throw in the sugar, the beaten egg, and that splash of vanilla. Give it all a quick stir so it’s nice and blended.

Mash up those bananas in a bowl until they’re really smooth. Melt the butter then mix it in.

Set your oven to 175°C. Smear some butter or spray into a pan that's about 23 by 13 cm.
