One Pot Prawn Pilaf (Printable Recipe)

01 - 400g large raw prawns, peeled and deveined
02 - 200g basmati rice, rinsed
03 - 1 medium white onion, finely chopped
04 - 2 garlic cloves, minced
05 - 1 medium carrot, diced
06 - 1 red bell pepper, diced
07 - 1 courgette (zucchini), diced
08 - 100g frozen edamame beans, peeled
09 - 500ml chicken stock, low sodium
10 - 1 tbsp ground cumin
11 - 1 tbsp ground coriander
12 - 1 tsp paprika
13 - 1 tsp turmeric
14 - 4 green cardamom pods, lightly crushed
15 - Fresh coriander, chopped (optional garnish)
16 - Salt, to taste
17 - Black pepper, to taste
18 - Low calorie spray oil

# Steps to Follow:

01 - Heat low calorie spray in a large heavy-bottomed pan over medium heat. Sauté onion and garlic until translucent, about 5 minutes.
02 - Add diced carrot and bell pepper. Cook for 5 more minutes, stirring occasionally, until softened.
03 - Stir in cumin, coriander, paprika, turmeric, and cardamom. Add rinsed rice and toast for 2–3 minutes until fragrant and translucent.
04 - Pour in chicken stock, then stir in courgette, edamame, and prawns. Bring to a simmer, reduce heat, cover, and cook for 15 minutes.
05 - Remove from heat and let the pan sit covered for 10 minutes. Do not lift the lid during this time.
06 - Uncover, fluff rice gently with a fork, and garnish with chopped fresh coriander if desired. Serve warm.
