Orange and Blueberry Chicken (Printable Recipe)

# Ingredients You'll Need:

→ For the chicken

01 - 4 bone-in, skin-on chicken thighs
02 - Salt, to taste
03 - Black pepper, to taste
04 - 1 tablespoon olive oil

→ For the sauce

05 - 1 cup fresh or frozen blueberries
06 - 1 cup freshly squeezed orange juice
07 - Zest of 1 orange
08 - 1/4 cup honey or maple syrup
09 - 2 tablespoons soy sauce
10 - 1 tablespoon Dijon mustard
11 - 1 teaspoon chopped fresh rosemary
12 - 1 tablespoon cornstarch (optional)

→ To serve

13 - Crusty bread, for serving
14 - Steamed vegetables or mashed potatoes (optional)
15 - Cooked white rice or wild rice (optional)

# Steps to Follow:

01 - Preheat oven to 200°C (400°F).
02 - Season chicken thighs on both sides with salt and black pepper.
03 - Heat olive oil in an ovenproof skillet over medium-high heat. Place chicken skin-side down and sear without moving for 5–7 minutes until golden brown. Flip and cook 3–4 minutes on the other side. Remove skillet from heat.
04 - In a saucepan, combine blueberries, orange juice, orange zest, honey or maple syrup, soy sauce, Dijon mustard, and rosemary. Cook over medium heat for 5–7 minutes, until the blueberries pop and the sauce thickens slightly. Optional: stir in dissolved cornstarch to thicken.
05 - Pour sauce over seared chicken in the skillet. Transfer skillet to the oven and bake for 25–30 minutes, until chicken reaches 75°C (165°F) internally.
06 - If desired, broil for 2–3 minutes for a golden finish. Monitor closely to prevent burning.
07 - Garnish with extra chopped rosemary and serve hot with preferred sides. Don’t forget bread for the sauce.
