In a medium bowl combine shredded cheddar, cream cheese, mayonnaise, pimentos, lemon juice, chives, salt, and pepper. Stir until smooth and well blended.

Cover and refrigerate the cheese mixture for at least one hour to allow the flavors to meld and the texture to firm up.

In a small bowl mix softened butter with Italian seasoning and a pinch of salt until evenly combined.

Butter one side of each bread slice. Lay four slices butter side down and spread about 1/3 cup of the cheese mixture onto each. Top with the remaining slices, butter side up.

Heat a large skillet over medium-low. Grill sandwiches for 3 to 4 minutes per side until golden brown and cheese is melted.
