In a large bowl, combine ground beef with 2 tbsp barbecue sauce, salt, and pepper. Mix gently and shape into 4 patties.

Lay 2 bacon slices in a cross pattern on parchment. Place a patty in the center, top with a pineapple ring, fold bacon ends over, and secure with a toothpick.

Arrange wrapped patties on wire rack. Bake 15 minutes, brush with remaining barbecue sauce, then bake 10–15 minutes more until internal temp reaches 160°F.

Let burgers rest 5 minutes. Remove toothpicks, place on toasted brioche buns, and add desired toppings before serving.
