Preheat the oven to 200°C (392°F). Wash the cauliflower and broccoli florets thoroughly, then pat them dry with a paper towel. Cut into evenly sized pieces.

Peel the garlic cloves and finely mince them or use a garlic press for even consistency.

In a large mixing bowl, whisk together olive oil, minced garlic, salt, and pepper. Add the cauliflower and broccoli florets and toss until evenly coated.

Line a baking sheet with parchment paper. Spread the vegetables out in a single layer without overcrowding. Roast for 20–25 minutes, stirring once halfway through, until golden and crispy.

Remove the tray and sprinkle grated Parmesan cheese evenly over the vegetables. Return to the oven for an additional 5 minutes until the cheese is melted and lightly browned.
