# Ingredients You'll Need:

→ Burger Mixture

01 - 1.5 pounds fresh salmon, skin removed
02 - 0.25 cup mayonnaise
03 - 3 tablespoons Dijon mustard
04 - 0.25 teaspoon cayenne pepper
05 - 0.5 teaspoon garlic powder
06 - 0.25 teaspoon ground black pepper
07 - 1 teaspoon lemon zest
08 - 0.25 cup red onion, chopped
09 - 1 teaspoon fresh dill, chopped
10 - 0.25 teaspoon kosher salt
11 - 0.5 cup plain breadcrumbs
12 - 6 burger buns

→ Lemon Dill Mayo

13 - 1 cup mayonnaise
14 - 2 tablespoons lemon juice
15 - 1 tablespoon fresh dill, chopped
16 - 2 teaspoons fresh parsley, chopped
17 - 0.5 teaspoon Old Bay seasoning
18 - 1 garlic clove, minced
19 - Salt and pepper to taste

# Steps to Follow:

01 - Place half of the salmon, mayonnaise, and Dijon mustard into a food processor. Blend until a paste forms, about 1 minute.
02 - Chop remaining salmon into chunks and add to the processor with cayenne, garlic powder, black pepper, lemon zest, onion, dill, salt, and breadcrumbs. Pulse 30 seconds until mixture is cohesive.
03 - Using a 0.5 cup scoop, form mixture into 6 patties and place on a parchment-lined tray. Chill in refrigerator while making the mayo.
04 - In a bowl, mix together all mayo ingredients by hand. Adjust seasoning with salt and pepper. Refrigerate until ready to use.
05 - Heat 2 tablespoons olive oil in a large pan over medium. Cook 2 to 3 patties at a time for 4 minutes, flip, and cook 3 minutes more until golden and cooked through.
06 - Toast burger buns if serving immediately. Assemble burgers with desired toppings and spoonfuls of lemon dill mayo.

# Extra Tips:

01 - Chilling the patties before cooking helps them retain shape and improves texture.
02 - For best results, use fresh salmon and avoid overprocessing to preserve texture.
