Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Add half the beef and onions, sear until browned and onions are soft.

Remove the first batch, add remaining olive oil and repeat the searing process with the remaining beef and onions.

Return all beef and onions to the pot. Pour in beef stock, add soup mix, bay leaf, Worcestershire sauce, and season with salt and pepper.

Reduce heat to low, cover, and simmer for 90 minutes until meat is tender.

Mix cornstarch with water, stir into pot and cook for several minutes until gravy thickens.

Discard bay leaf. Garnish with chopped parsley before serving.
