Garlic Parmesan Chicken (Printable Recipe)

Chicken thighs and bite-sized potatoes come together with Parmesan, garlic, and a handful of herbs for a cozy, easy slow-cooked meal.

# Ingredients You'll Need:

→ Main Ingredients

01 - 4 cloves garlic, chopped small
02 - 2 tablespoons (30 ml) olive oil
03 - 2 tablespoons (28 g) unsalted butter
04 - 2 pounds (900 g) baby red potatoes, each sliced in four
05 - 8 chicken thighs, bone in and skin on

→ Seasonings

06 - Fresh black pepper, add as much as you like
07 - Kosher salt, season till it tastes good
08 - 1/2 teaspoon dried thyme
09 - 1/4 teaspoon dried rosemary
10 - 1/2 teaspoon dried oregano
11 - 1/2 teaspoon dried basil

→ Finishing Touches

12 - 2 tablespoons fresh parsley, chopped up
13 - 1 cup (100 g) Parmesan, freshly grated

# Steps to Follow:

01 - Scoop it all onto your dishes. Toss over some Parmesan and sprinkle parsley on top. Chow down while it's warm.
02 - Put those brown chicken thighs on top of your potato mix. Put the lid on and let it cook on high for 3–4 hours, or on low for 7–8 hours. Just check the chicken gets to at least 74°C inside.
03 - Drop those potato chunks into your slow cooker. Drizzle on the olive oil, then toss in the garlic and dried thyme. Add salt and pepper. Mix it up so everything's coated.
04 - On medium-high, melt butter in a big frying pan. Put chicken in, skin side down first. Let each side go until it's golden and crisp, about 2–3 minutes per side. Take the pieces out and get rid of extra oil.
05 - Shake basil, oregano, rosemary, pepper, and salt over both sides of your chicken thighs evenly.

01 - If you want crunchier skin, stick the brown chicken pieces under a broiler for a couple of minutes before serving.
