01 - 1.5 pounds ground beef (80/20 blend)
02 - Salt to taste
03 - Black pepper to taste
04 - 4 brioche burger buns
05 - 4 slices sharp cheddar cheese
06 - 1 small red onion, thinly sliced
07 - Dill pickle chips to taste
08 - 1 tablespoon butter

09 - 1/2 cup mayonnaise
10 - 3 slices cooked crispy bacon, finely chopped
11 - 1 teaspoon Dijon mustard
12 - 1/2 teaspoon smoked paprika
13 - 1 tablespoon bacon fat (optional)

# Steps to Follow:

01 - In a small bowl, combine mayonnaise, chopped bacon, Dijon mustard, smoked paprika, and bacon fat if using. Season with salt and pepper and chill until needed.
