Berry Pistachio Spinach (Printable Recipe)

Tender spinach gets tossed with juicy berries, sweet pistachios, creamy strawberry sauce, and bits of feta.

# Ingredients You'll Need:

→ Salad

01 - 1 kiwi, peeled and sliced up, then chopped into quarters (if you want)
02 - 1 sweet apple, sliced or chopped however you like
03 - 1/2 small red onion, quartered and sliced super thin
04 - 65 grams raspberries
05 - 75 grams blueberries
06 - 125 grams strawberries, sliced up
07 - 10 cups baby spinach leaves

→ Creamy Strawberry Poppy Seed Dressing

08 - 9 grams dried minced onion flakes (if you feel like it)
09 - 12 grams poppy seeds
10 - 15 milliliters apple cider vinegar
11 - 38 grams white sugar
12 - 30 milliliters milk
13 - 30 grams sour cream
14 - 60 milliliters mayo
15 - 150 grams strawberry yogurt
16 - 9 grams sesame seeds

→ Garnishes

17 - 50 grams feta crumbles
18 - 50 grams roasted and salted pistachios that've been caramelized

# Steps to Follow:

01 - If you expect leftovers, don't mix in the dressing. Just add it to single servings as you go. Dish it up right away.
02 - Pour on however much dressing you want, then toss everything to get it all coated. Add some of those sweet pistachios and top with feta right before you eat. Freshly cracked salt and pepper take it up a notch.
03 - Toss all the spinach, blueberries, strawberries, apple, raspberries, kiwi (if you're into it), and onion quarters in a big bowl. Give it a gentle mix so nothing gets squished.
04 - Toss in your poppy and sesame seeds to the creamy mixture. Buzz it just a bit more. If you need it sweeter, throw in extra sugar, or more vinegar if you want more tang. A splash of milk helps if it's too thick. Chill it till you're ready.
05 - Chuck together the yogurt, mayo, sour cream, vinegar, sugar, milk, and onion flakes (if you're feeling fancy) in the blender. Mix it up until smooth as can be.
06 - Fix up your caramelized, roasted, and salted pistachios with your go-to method. Leave them somewhere safe to cool off.

# Extra Tips:

01 - To keep things crisp and tasty, don't add the dressing until right before you dig in.
