Spoon a quarter cup of peanut sauce over everything. Sprinkle on some mint leaves, add your cashews and tuck in a few sesame crackers on top of each bowl. Dig in right away.

Put a layer of noodles in each of the four bowls. Pile on your avocado slices, some carrot shreds, a handful of scallions, a few chicken pieces, and tuck in three lettuce leaves each.

Dump your rice noodles in a big bowl that won't mind heat. Boil some salted water in a pot, then pour it over the noodles. Let them sit for 5 to 7 minutes till they're soft, then drain really well.

Sprinkle salt and pepper on your chicken breasts first. Heat sesame oil in a pan on medium. Drop in the chicken and cook it. Flip once. Both sides should get golden and cooked through, about 8 to 10 minutes. Let them rest for a bit before you slice them thin.
