Steak And Potato Hash (Printable Recipe)

Hearty hash with crispy potatoes, seared steak, and eggs all in one pan.

01 - 12 oz New York strip steak, ribeye, or top sirloin, trimmed
02 - 4 Yukon Gold potatoes, diced into 1/2 to 3/4 inch cubes
03 - 1 red bell pepper, diced
04 - 1 green bell pepper, diced
05 - 1 medium onion, chopped
06 - 4 large eggs, fresh
07 - 2 tablespoons vegetable oil
08 - 1 teaspoon paprika
09 - 1/4 teaspoon red pepper flakes
10 - 2 cloves garlic, minced
11 - Salt, to taste
12 - Black pepper, to taste
13 - Fresh chopped parsley or green onions for garnish

# Steps to Follow:

01 - Boil the diced Yukon Gold potatoes for 5 minutes to partially soften. Drain and set aside.
02 - Season steak with salt and pepper. Sear in a hot cast iron skillet with oil for 4–5 minutes per side until browned. Rest 10 minutes, then cube.
03 - Add more oil to skillet. Sauté potatoes, onions, and bell peppers with garlic, paprika, red pepper flakes, salt, and pepper for 15 minutes until golden and tender.
04 - Return cubed steak to skillet and stir into potato mixture. Heat through for 2–3 minutes if needed.
05 - Lower heat. Create four wells in hash and crack one egg into each. Cover and cook 3–4 minutes until whites are set and yolks remain runny.
06 - Season to taste, garnish with chopped parsley or green onions, and serve directly from skillet.
