Wash and dry the new potatoes thoroughly. Cut into halves or quarters if large, keeping smaller ones whole.

In a bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper. Add the potatoes and toss until evenly coated.

Preheat oven to 200°C (400°F). Place potatoes on a parchment-lined baking tray and roast for 30–35 minutes, turning halfway, until golden and crispy.

In a bowl, blend feta cheese and cream using a mixer or fork until smooth. Season lightly with salt and pepper.

Transfer hot potatoes to a serving plate. Top with whipped feta and sprinkle with fresh herbs.
