BBQ Chicken Flatbread (Printable Recipe)

Crispy flatbread with smoky chicken, sweet peppers, and melty mozzarella.

# Ingredients You'll Need:

→ Chicken

01 - 1 lb chicken breast, cut into very small bite-sized pieces
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon smoked paprika
04 - 1/2 teaspoon garlic powder
05 - 1/2 teaspoon onion powder
06 - 1/2 teaspoon salt
07 - 1/4 teaspoon black pepper

→ Flatbreads

08 - 2 flatbreads
09 - 1/3 cup BBQ sauce, plus more for drizzling
10 - 2 cups shredded mozzarella
11 - 1 red bell pepper, thinly sliced
12 - 1/8 small red onion, thinly sliced
13 - 1/4 cup chopped cilantro

# Steps to Follow:

01 - Preheat oven to 400°F.
02 - Season diced chicken with smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated.
03 - Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 7 to 10 minutes, stirring occasionally, until fully cooked.
04 - Place flatbreads on a baking sheet. Brush each with a thin layer of BBQ sauce, then sprinkle with mozzarella. Top with sliced red onion, bell peppers, and cooked chicken.
05 - Bake for 10 to 13 minutes, or until flatbreads are golden brown and cheese is melted and bubbly.
06 - Garnish with chopped cilantro and drizzle with extra BBQ sauce if desired. Slice and serve warm.

# Extra Tips:

01 - Slice the red onion and bell peppers very thin so they soften slightly and cook through in the oven.
02 - Dice the chicken into small pieces to make the flatbreads easier to eat and ensure each bite contains all the toppings.
03 - You can cook the chicken and slice the vegetables up to one day in advance. Store separately in the refrigerator until ready to assemble.
04 - Assemble flatbreads ahead and freeze; bake from frozen at 400°F for 15 to 18 minutes.
05 - Reheat leftovers in the oven or air fryer at 350°F for 5 to 7 minutes until warmed and crisp.
