Preheat the oven to 400°F (200°C) and lightly grease a baking sheet or pizza pan.

Separate the biscuit dough and press the pieces together to form a unified crust. Flatten and stretch to fit the baking pan.

Bake the crust for 8 to 10 minutes until lightly golden, then set aside.

In a large skillet over medium heat, cook the sausage and diced onion until browned. Drain excess fat if necessary.

Stir in the garlic and cook for 1 minute. Add the flour and cook for another minute, stirring continuously.

Gradually pour in the milk while stirring. Cook until thickened, 3 to 5 minutes. Season with salt, pepper, and optional red pepper flakes.

Spread the sausage gravy evenly over the par-baked crust. Top with cheddar and mozzarella cheeses. Crack eggs on top if using.

Return to oven and bake for 10 to 12 minutes, until cheese is melted and bubbly and eggs are set to your preference.
