02 - 3 cups butternut squash, peeled and diced
03 - 1 small red onion, diced
04 - 12 ounces spicy Italian sausage, casings removed
05 - 2 cloves garlic, minced
06 - 1 bunch Swiss chard, stems removed and chopped
07 - 1 teaspoon red chili flakes
08 - Salt and black pepper, to taste
09 - 8 ounces rigatoni pasta
10 - 1/4 cup creme fraiche
11 - 1/3 cup grated parmesan cheese, plus extra for serving

# Steps to Follow:

01 - Heat olive oil in a large skillet over medium heat. Add butternut squash and cook until lightly browned and beginning to soften.
02 - Stir in diced onion and cook until softened. Add crumbled spicy sausage and cook until browned, breaking apart with a spoon.
03 - Add Swiss chard, garlic, and red chili flakes. Cook until the greens are wilted and sausage is fully cooked.
04 - Meanwhile, bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve 1/2 cup of pasta water before draining.
05 - Toss cooked rigatoni with the sausage and squash mixture. Stir in creme fraiche, parmesan, and a splash of reserved pasta water until creamy.
