Set oven to 350°F (180°C) and allow to fully preheat. Line a baking sheet with parchment paper.

Crack 8 eggs into a large bowl. Add salt and pepper, then whisk until smooth and slightly frothy.

Heat medium skillet over medium heat with cooking spray or butter. Pour in half the eggs, let set, then gently fold until cooked through in a thick, soft sheet. Repeat with remaining eggs.

Gently fold each cooked egg portion to fit croissant shape, creating compact squares that will layer well.

Slice each croissant almost completely through, leaving a hinge. Layer ham, folded egg, and cheese slice inside each croissant. Close gently.

Arrange filled croissants on prepared baking sheet without touching. Bake 5-7 minutes until cheese melts and ham is warmed through.

Remove from oven and serve hot while cheese is gooey and croissants remain crisp on the outside.
