Submerge wooden skewers in water for 20–30 minutes to prevent burning during cooking.

In a large bowl, combine chicken cubes with olive oil, garlic powder, smoked paprika, parsley, chili flakes, lemon juice, salt, and pepper. Mix thoroughly until evenly coated.

In a small bowl, mix mayonnaise, Thai sweet chili sauce, chopped parsley, and a pinch of salt. Divide sauce in half, reserving one portion for serving.

Thread 5–7 marinated chicken cubes onto each soaked skewer or metal skewer.

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or place a rack over the sheet.

Place skewers in a single layer on the prepared sheet and brush with half of the bang bang sauce. Bake for 20–25 minutes, flipping halfway, until the internal temperature reaches 165°F (74°C).
