02 - 1.5 ounces fully cooked sweet Italian chicken sausage (1/2 link)
03 - 1 cup low-sodium vegetable broth
04 - 1/2 cup old-fashioned rolled oats
05 - 1/8 teaspoon salt
06 - 1/2 cup grape tomatoes, halved
07 - 1/3 cup packed fresh herbs, such as parsley and/or cilantro
08 - 1/2 cup packed baby arugula

01 - Heat 1 teaspoon oil in a small nonstick or cast-iron skillet over medium heat. Add sausage and cook until evenly browned, about 10 minutes.
