Light noodles with tomatoes, feta, and savory chicken in a quick Mediterranean-style dish.

# Ingredients You'll Need:

→ Main Ingredients

01 - 1 pound boneless, skinless chicken breasts
02 - 2 (7-ounce) packages shirataki noodles, rinsed
03 - ¼ cup extra-virgin olive oil
04 - ½ teaspoon salt, divided
05 - 1 pint cherry tomatoes, halved
06 - 4 cloves garlic, thinly sliced
07 - 1 teaspoon chopped fresh oregano
08 - ½ cup lightly packed fresh basil leaves, plus more for garnish
09 - ⅓ cup crumbled feta cheese
10 - ¼ cup pitted Kalamata olives, halved lengthwise

# Steps to Follow:

01 - Heat olive oil in a large nonstick skillet over medium-high heat. Season chicken with 1/4 teaspoon salt and cook until golden brown and internal temperature reaches 165°F, about 5 to 7 minutes per side. Transfer to a cutting board.
02 - In the same skillet, add cherry tomatoes, garlic, oregano, and the remaining 1/4 teaspoon salt. Cook over medium-high heat, stirring often, until tomatoes soften and release juices, about 8 minutes.
03 - Stir in shirataki noodles, basil leaves, crumbled feta, and Kalamata olives. Toss gently to combine and heat through. Remove from heat.
04 - Slice cooked chicken on the diagonal. Divide noodle mixture among four bowls and top each with sliced chicken. Garnish with additional basil, if desired.

# Extra Tips:

01 - For best texture, pat shirataki noodles dry after rinsing before adding to the skillet.
