# Steps to Follow:

01 - Preheat oven to 350°F and coat an 11×7-inch baking dish with cooking spray.
02 - Bring milk and 2 cups of heavy cream to a boil over medium-high heat. Stir in grits and butter. Reduce heat and whisk constantly for 5–7 minutes until tender.
03 - Remove from heat and stir in the beaten egg, shredded cheese, and 1 teaspoon salt. Mix until fully combined.
04 - Spoon grits mixture into prepared baking dish. Cover and bake for 35–40 minutes until set.
05 - In a large saucepan over medium-high, cook bacon until crisp, about 8 minutes. Transfer to paper towels and reserve 3 tablespoons of drippings in pan.
