Preheat oven to 350°F (175°C). Coat a 9x13-inch baking pan with nonstick spray.

In a large bowl, combine sugar cookie mix, pudding mix, brown sugar, melted butter, 1 teaspoon vanilla, and 1 egg. Mix well and press evenly into the bottom of the pan.

In a stand mixer or large bowl, beat cream cheese, sour cream, and sugar until smooth. Add remaining whole egg, egg yolks, and 1 1/2 teaspoons vanilla. Beat until smooth.

Pour cheesecake mixture over prepared crust and smooth the top with a spatula.

Bake for 35 to 45 minutes until the center is set. Remove from oven and let cool for at least 30 minutes.

Top with sprinkles once cooled. Store in the refrigerator before slicing and serving.
