Sugar Cookie Cheesecake Bars (Printable Recipe)

# Ingredients You'll Need:

→ Crust

01 - 1 package (17.5 oz) sugar cookie mix
02 - 1 box (3.4 oz) French vanilla instant pudding mix
03 - 2 tablespoons light brown sugar, packed
04 - 1/2 cup (1 stick) butter, melted
05 - 1 teaspoon vanilla extract
06 - 1 whole egg

→ Cheesecake Filling

07 - 2 packages (8 oz each) cream cheese, softened
08 - 1/2 cup sour cream
09 - 1/2 cup granulated sugar
10 - 1 whole egg
11 - 3 egg yolks
12 - 1 1/2 teaspoons vanilla extract

→ Topping

13 - Sprinkles for garnish

# Steps to Follow:

01 - Preheat oven to 350°F (175°C). Coat a 9x13-inch baking pan with nonstick spray.
02 - In a large bowl, combine sugar cookie mix, pudding mix, brown sugar, melted butter, 1 teaspoon vanilla, and 1 egg. Mix well and press evenly into the bottom of the pan.
03 - In a stand mixer or large bowl, beat cream cheese, sour cream, and sugar until smooth. Add remaining whole egg, egg yolks, and 1 1/2 teaspoons vanilla. Beat until smooth.
04 - Pour cheesecake mixture over prepared crust and smooth the top with a spatula.
05 - Bake for 35 to 45 minutes until the center is set. Remove from oven and let cool for at least 30 minutes.
06 - Top with sprinkles once cooled. Store in the refrigerator before slicing and serving.
