Tomato Peach Burrata Salad (Printable Recipe)

# Ingredients You'll Need:

→ Vinaigrette

01 - 1/2 cup extra virgin olive oil
02 - 1/4 cup balsamic vinegar or champagne vinegar
03 - 1 tablespoon honey
04 - 1/2 shallot, finely chopped
05 - 1 clove garlic, grated
06 - 1 teaspoon lemon zest
07 - 1/4 cup chopped fresh basil
08 - 2 tablespoons chopped fresh oregano
09 - 1 tablespoon chopped fresh dill
10 - 1 tablespoon chopped fresh thyme
11 - Red pepper flakes, to taste
12 - Kosher salt and black pepper, to taste

→ Salad

13 - 2 cups cherry tomatoes, halved if large
14 - 3 peaches, sliced into wedges
15 - 1 cup pitted fresh cherries
16 - 8 ounces burrata cheese, at room temperature
17 - 1/4 cup toasted pumpkin seeds
18 - 1 handful arugula
19 - Extra virgin olive oil, for drizzling
20 - Balsamic vinegar or champagne vinegar, for drizzling
21 - Fresh lemon juice, optional
22 - Chopped fresh basil, for garnish
23 - Chopped fresh oregano, for garnish
24 - Chopped fresh dill, for garnish
25 - Chopped fresh thyme, for garnish
26 - Red pepper flakes, for garnish
27 - Kosher salt and black pepper, to taste

# Steps to Follow:

01 - In a small bowl, whisk together the olive oil, vinegar, honey, shallot, garlic, lemon zest, basil, oregano, dill, thyme, red pepper flakes, salt, and black pepper until well combined.
02 - In a large mixing bowl, combine the cherry tomatoes, peach wedges, and cherries. Pour the vinaigrette over the mixture and toss gently to coat. Let sit for 10–15 minutes to marinate.
03 - Arrange arugula on a serving platter or shallow bowl. Spoon the marinated fruit mixture over the greens.
04 - Break the burrata into pieces and place over the salad. Drizzle with extra olive oil and vinegar if desired.
05 - Top with toasted pumpkin seeds and sprinkle with additional herbs, red pepper flakes, and flaky salt. Serve with toasted bread if desired.
