# Ingredients You'll Need:

→ Filling

01 - 1 cup finely chopped mixed vegetables (carrots, bell peppers, zucchini)
02 - 1/2 cup shredded mozzarella or cheddar cheese
03 - 1 tablespoon olive oil
04 - 2 cloves garlic, minced
05 - 1 teaspoon Italian seasoning
06 - Salt and pepper to taste

→ Wrapping and Garnish

07 - 8 to 10 spring roll wrappers or wonton wrappers
08 - Cooking spray or oil for brushing
09 - Fresh parsley or cilantro, chopped
10 - Red pepper flakes, optional

# Steps to Follow:

01 - Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
02 - Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute. Add chopped vegetables and cook for 5 to 7 minutes until tender. Season with Italian herbs, salt, and pepper. Remove from heat and let cool.
03 - In a bowl, mix cooled vegetable mixture with shredded cheese until well combined.
04 - Place 2 tablespoons of filling in the center of each wrapper. Fold sides and roll tightly. Use water or egg wash to seal edges if needed.
05 - Arrange rolls seam-side down on baking sheet. Brush or spray tops with oil. Bake for 15 to 20 minutes, flipping halfway through for even crispiness.
06 - Allow rolls to cool slightly. Garnish with chopped herbs and red pepper flakes if desired. Serve warm with dipping sauce.

# Extra Tips:

01 - Thaw and drain frozen vegetables well to prevent soggy rolls.
02 - Use puff pastry or tortillas as alternatives to spring roll wrappers.
03 - To store, refrigerate in an airtight container for up to 3 days and reheat in oven.
04 - You can prep the rolls a day ahead and bake before serving.
