Pat ground chicken dry, divide into 2 oz portions, and gently shape without compacting. Season with salt and pepper.

Spread mayonnaise on both sides of brioche buns and toast on a hot griddle until golden. Set aside on a wire rack.

Place chicken portions on hot surface with parchment paper and press thin. Season the exposed side immediately.

Cook patties for 2–3 minutes until browned. Flip and immediately place cheese slices on half the patties.
