Preheat oven to 200°C (390°F) and line a baking sheet with parchment paper.

Heat olive oil in a pan, sauté onions until soft, then add garlic and cook for 1 minute.

Add chopped spinach to the pan and cook until wilted, about 3–4 minutes. Season with salt, pepper, oregano, and nutmeg. Let cool slightly.

Stir crumbled feta cheese into the cooled spinach mixture.

Roll out puff pastry and cut into 8 cm x 8 cm squares.

Place a spoonful of filling in the center of each square, fold diagonally into a triangle, and seal edges with a fork.

Brush each triangle with beaten egg and sprinkle with sesame or nigella seeds if desired.

Bake for 20–25 minutes or until golden and puffed.

Serve warm or at room temperature with dipping sauce or yogurt.
