Peel and cube the sweet potatoes for even cooking and set aside.

In a small bowl, whisk together honey, garlic, soy sauce, paprika, salt, and pepper. Pour over the sausage and potatoes.

Cover the skillet and simmer for 10 minutes, allowing potatoes to become tender and flavors to meld.
