04 - 3 tablespoons olive oil
05 - creamy chipotle sauce (homemade or store-bought)
06 - salt to taste
07 - 8 flour tortillas (8-inch)
08 - 2 cups shredded lettuce
09 - 1 cup shredded cheese (cheddar or Mexican blend)
10 - diced tomatoes, avocado, or beans (optional)

→ Creamy Chipotle Sauce

11 - 2 tablespoons sour cream
12 - 2 tablespoons light mayonnaise
13 - 1 tablespoon diced pickled jalapenos (optional)
14 - 1 tablespoon pickled jalapeno juice (optional)
15 - 1/2 teaspoon paprika
16 - 1/2 teaspoon cumin
17 - 1/2 teaspoon garlic powder
18 - 2 tablespoons water

# Steps to Follow:

01 - Peel and cut the potatoes into 1/2-inch cubes.
02 - Toss the cubed potatoes with taco seasoning and corn starch, then coat with olive oil. Bake at 425°F for 25–30 minutes, flipping halfway.
03 - While potatoes bake, combine sour cream, mayonnaise, jalapenos, jalapeno juice, paprika, cumin, garlic powder, and water. Mix until smooth.
04 - Layer warm tortillas with lettuce, crispy potatoes, cheese, optional tomatoes, and chipotle sauce. Serve immediately.

# Extra Tips:

01 - For convenience, store-bought chipotle sauce like Taco Bell’s version is widely available at major retailers.
02 - To reduce spice, omit jalapenos and paprika in the sauce.
03 - For crispier potatoes, spread evenly on the baking sheet without overcrowding.
