Stuffed Pepper Soup (Printable Recipe)

# Ingredients You'll Need:

01 - 2 tablespoons extra virgin olive oil
02 - 1 pound lean ground beef
03 - 1 pound Italian sausage (mild or spicy)
04 - 1 small sweet onion, diced
05 - 1 small red bell pepper, diced, ribs and seeds removed
06 - 1 small green bell pepper, diced, ribs and seeds removed
07 - 2 cloves garlic, minced
08 - Salt and pepper, to taste
09 - 15 ounces petite diced tomatoes, undrained
10 - 10 ounces Rotel tomatoes, undrained
11 - 4 cups low-sodium beef broth
12 - 2 cups water
13 - 1/4 cup packed brown sugar
14 - 1 tablespoon Worcestershire sauce
15 - 1 teaspoon taco seasoning
16 - 1 teaspoon kosher salt
17 - 1/8 teaspoon black pepper

18 - 2 cups cooked long grain white rice
19 - Fresh chopped parsley, for garnish

# Steps to Follow:

01 - In a large Dutch oven, heat olive oil over medium-high heat. Add ground beef and sausage. Cook, breaking up meat with a wooden spoon, until no longer pink, about 3–5 minutes. Drain excess grease and return to heat.
02 - Add diced onion and bell peppers. Sauté for 3 minutes. Stir in minced garlic and cook until fragrant, about 30 seconds. Season with salt and pepper to taste.
03 - Stir in diced tomatoes, Rotel, beef broth, water, brown sugar, Worcestershire sauce, taco seasoning, salt, and pepper. Mix well to combine.
04 - Bring mixture to a boil, then reduce heat and simmer uncovered for 15 minutes, or until bell peppers are tender.
05 - Stir in the cooked rice and warm through. Taste and adjust seasoning if needed.
